Mix on medium speed with the paddle attachment until the dough gathers around the paddle.
Flour the countertop, roll out the dough to a thickness of 0.5 to 1 cm, and cut out cookies using a cookie cutter or a coffee cup.
Place the cookies on a baking sheet lined with parchment paper and bake in a preheated convection oven at 170°C (340°F) for about 20 minutes.
Allow the cookies to cool and dip half of each cookie into melted Couverture Chocolate.
