Butter Cookies by chef Yiannis Lucacos

INGREDIENTS
  • 190 gr. OLYMPOS butter
  • 1 gr. salt
  • 75 gr. icing sugar
  • 20 gr. egg yolks
  • 1-piece natural vanilla
  • 220 gr. soft flour
  • Sugar, for rolling

METHOD

FOR THE COOKIES

  1. Mix all the ingredients in the mixer bowl with the flat beater on medium speed, until you have a homogeneous dough. Shape the dough into a cylindrical shape and place it in the fridge until it is firm.
  2. Remove from the fridge and spread lightly with water. Roll the dough on a pan with granulated sugar and cut it into slices. Place the slices on a non-stick pan and bake in a preheated oven at 160° C, until they get a golden colour, for about 30 minutes.

 

TIP:* We can dip cookies in melted chocolate and let it cool.* We can crumble the cookies over ice cream, yogurt or pastry cream.* We can make a cookie sandwich with a filling of our choice.

* If you do not have a pan with non-stick coating can use baking paper.
