Ceasars-Like Light Cool Salad

INGREDIENTS

FOR THE CROUTONS

  • 3 slices of toast bread
  • Olive Oil
  • Salt
  • Oregano

FOR THE CHICKEN FILLET

  • 1 chicken fillet (cut in half)
  • Salt
  • Pepper
  • Olive Oil

FOR THE LIGHT SAUCE

  • 150 gr OLYMPOS Strained Yogurt 2%
  • 1 tablespoon of Dijon mustard
  • 2 anchovy fillets in olive oil
  • 30 gr parmesan
  • 1 small clove of garlic
  • 2 tablespoons of olive oil
  • 2 tablespoons of lemon juice
  • pepper

FOR THE SALAD

  • 1 small lettuce
  • Pieces of Parmesan

METHOD
  1. We cut the toast bread into small squares and put it on a baking tray with greaseproof paper.
  2. We sprinkle with olive oil, salt, oregano and bake in a preheated oven in the air for 10 minutes at 180 c.
  3. We cut a chicken fillet in half and season it very well with salt and pepper on both sides.
  4. We pour olive oil into a pan and cook the chicken on medium heat until it gets a nice color.
  5. We put the 2% OLYMPOS Strained Yogurt, mustard, anchovies, grated parmesan, garlic, olive oil, lemon juice, pepper in a food processor and mash very well.
  6. We cut the chicken fillet into pieces and arrange the salad.
  7. In a deep dish, we break the lettuce with our hands, add the light sauce, the croutons, the chicken fillet and we cut the parmesan cheese with a peeler into thick slices.
  8.  We mix all the ingredients together very well and enjoy the most delicious cool and light Caesars salad.
