Chicken burger patties with vegetables and yogurt

INGREDIENTS

FOR THE DISH

  • 6 chicken burger patties
  • 500 gr. potato, in thin slices
  • 500 gr. zucchini, in thin slices
  • 200 gr. cherry tomatoes, cut in the middle
  • salt
  • black pepper, freshly-ground
  • olive oil

FOR THE GROUND CHICKEN MIXTURE

  • 1 kl. of ground chicken fillet
  • 600 gr. carrot, peeled, in chunks
  • 150 gr. Strained yogurt 5% fat
  • 5 gr. smoked paprika
  • 5 gr. cumin
  • 7 gr. oregano
  • 40 gr. sriracha
  • 100 gr. oat flakes
  • 15 gr. salt
  • 40 gr. spring onion, the green part

METHOD

FOR THE DISH

  1. In a bowl, add the vegetables, salt, pepper, olive oil and mix.
  2. Spread the vegetables evenly in a deep baking pan, cover with aluminium foil and bake at pre-heat oven at 220 °C for approximately 10 minutes.
  3. Take the baking pan off the oven, remove the aluminium foil, add the burger patties and resume baking, until the vegetables get a golden color and the patties are internally baked, for approximately 30 more minutes. Take the baking pan off the oven, let the food cool lightly for 5-10 minutes and serve.

FOR THE GROUND CHICKEN MIXTURE

  1. In a multi-cutter, grind the carrot with Strained yogurt 5% fat, the paprika, the cumin, the oregano and the sriracha, making sure than no large chunks of carrots are left.
  2. In a bowl mix the ground chicken with the yoghurt mixture and the remaining ingredients, until you get a homogenous mixture.
  3. Shape the mixture into burgers of 300 g each (approximately 6 burgers).
