marinated fruit
almonds, roasted, coarsely chopped
carob rusks, crumbled
raspberries
FOR THE CHOCOLATE YOGURT MOUSSE
500 gr.
Strained yogurt 2% fat
60 gr. cocoa, sifted
100 gr. honey
2 gr. cinnamon
2 gr. salt
FOR THE MARINATED FRUIT
60 gr. orange fillet, cut in medium cubes
40 gr. apricot, drained, cut in medium cubes
20 gr. raisins
80 gr.
orange juice
40 gr. amaretto

METHOD
FOR THE DISH
In 4 clear glasses, divide the chocolate mousse and garnish with the marinated fruit, the almonds, the carob rusks and raspberries.
FOR THE CHOCOLATE YOGURT MOUSSE
In a deep bowl, add all the ingredients and mix with a whisk, until the mixture gets homogenous.
Transfer the mixture to a pastry bag.
FOR THE MARINATED FRUIT
In a bowl, mix the
orange juice
with the liqueur, add the raisins, apricots and leave them until they get dump, for approximately 15 minutes.
Strain the fruit and mix them with the orange.
