Easter cookies

50 cookies
INGREDIENTS
  • 700 gr. soft flour
  • 270 gr. granulated sugar
  • 3 medium eggs
  • 250 gr. Cow butter, at room temperature
  • 50 ml Orange juice
  • zest from 1 orange (unwaxed)
  • 2 gr. mastic (5 tears)
  • ½ tsp. of mahlab
  • 2 vanillins
  • ¼ tsp. of kakoule (cardamom)
  • ¼ tsp. of baking soda
  • ½ tsp. of baking powder

FOR BRUSHING:

  • 1 egg

METHOD

 

  1. In a multi-cutter, crush the mastic, the kakoule, the mahlab, the vanillins, the baking powder, the baking soda with 100g of granulated sugar.
  2. In a bowl, put the mixture of spices into the rest of the sugar, the eggs, the orange zest and whisk with the mixr, until the mixture gets really fluffy.
  3. We melt the Butter Olympos and we let the butter reach room temperature
  4. Add OLYMPOS Orange juice and resume whisking.
  5. Incorporate the flour with the liquid ingredients sifting it in 2 batches.  Knead softly, until you get a soft pliable dough.
  6. Measure each piece to be 30 g and shape it as you like.
  7. Beat 1 medium egg and brush each cookie.
  8. Bake at preheat oven set to resistances at 190-200C for 20-25 minutes.
