Energizing Lenten Vegetable Veloute Soup

METHOD
  1. In a saucepan, heat the olive oil and stir-fry the onion for 2 minutes.
  2. Add the sliced carrots, sliced leeks, sliced potatoes and continue stir-frying for 3 minutes.
  3. Pour in the vegetable broth and salt, close the lid and let the soup simmer for 25 minutes until the vegetables are soft.
  4. Remove the pot from the stove and with a hand blender, puree the vegetables.
  5. Add pepper and pour in the OLYMPUS KARPOS Almond Sugar-Free Natural Drink, stirring constantly.
  6. Serve the soup hot and garnish with whole-wheat croutons, pepper, chopped parsley and olive oil.
