Fluffy “Revani’’ (Semolina Cake) flavored with syrup and cow butter OLYMPOS

INGREDIENTS

FOR RAVANI

  • 5 eggs
  • 250 gr. Cow butter OLYMPOS
  • 1 cup of granulated sugar
  • 1 cup durum flour
  • 2 cups fine semolina
  • 3 vanilla extract
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • Orange zest

FOR THE TOPPING

FOR SYRUP

  • 3 cups of water
  • 3.5 cups of sugar
  • Orange peel
  • 500ml Orange juice OLYMPOS

METHOD

FOR THE REVANI

  1. We separate the egg whites from the egg yolks.
  2. Whip the 5 egg whites well so that they get fluffy.
  3. Add the fresh butter OLYMPOS and the granulated sugar and mix well.
  4. Then add the egg yolks to the mixture.
  5. Add the flour, the semolina, the vanilla, the baking powder and the baking soda to a bowl, stir softly and add orange peel.
  6. Then, add the whole egg mixture gradually until it is well-mixed.
  7. Then put a little butter on a baking pan and spread it well over the surface.
  8. Pour a little flour and then place the remaining mixture.
  9. Bake in the oven at 200ºC degrees for 50 ‘- 60’ minutes, until it’s well cooked.
  10. For the whipped cream
  11. Stir well the heavy cream with the powdered sugar until it becomes a thick mixture and put it in the freezer to freeze.
  12. For the syrup
  13. Heat the water with the sugar in a pot and add the juice and the orange peel.
  14. Once the revani is baked, let it cool and pour the hot syrup.
  15. After the revani absorbs the syrup, cut it into pieces and serve with the frozen whipped cream!
