Add the flour, the salt and gradually pour the water in a bowl while kneading.
The dough you want to make shall be like bread dough, soft, but not sticking on hands.
Cut small dough pieces of the dough and make them half a centimeter in size so that they look like strings.
Then place them on a floured surface and one by one the dough “strings”, cut them into pieces 5-7 cm long and “drag” with your two fingers (pointer and middle) trying to make small shells.
In a large saucepan, add plenty of salted water and, when it is boiled, pour the goggles by shaking them to remove the unnecessary flour.
Stir often because they stick easily and boil for about 30 minutes.
