Grate the pumpkin in a thick grater and put it in a strainer.
Push it with your hands to remove excess fluid.
Slice our vegetables and herbs thinly.
Add the onion, the spearmint, the parsley, the crushed feta OLYMPΟS, the pepper, the salt, the grated kefalotyri cheese OLYMPOS, the cumin and the oil in a bowl.
Stir them very well with the spoon and add gradually the flour until the mixture can be easily molded by your hands without sticking.
Then shape the kolokithokeftedes and fry them in hot oil to make them crispy.
Fry about 2′ on each side. Let them drain on absorbent paper and serve them with dips of Greek yoghurt OLYMPOS, cumin, oil and parsley.
