Mediterranean oven omelet with vegetables

INGREDIENTS
  • 3 eggs
  • 100 ml heavy cream 20%
  • 15 cherry tomatoes
  • ½ Florinis sweet red pepper
  • 1 eggplant (peeled)
  • 2 zucchini
  • ½ green pepper
  • ½ tsp. smoked paprika
  • fresh spearmint
  • 1 tsp. of olive oil
  • Salt-Pepper

METHOD
  1. Slice the vegetables and put them in a baking tray. Add olive oil, salt, pepper, mix and bake in a preheated oven at 190° C for about 20 minutes.
  2. Put eggs, cream, spearmint, salt, paprika in a bowl and mix all the ingredients with the whisk until they are homogenized.
  3. When the vegetables are cooked, pour on them the egg and heavy cream mixture and cook them at 180° C for about 30 minutes.
