Panacotta with yogurt and honey

INGREDIENTS
  • 5 gr. wrap sheets
  • 300 gr. heavy cream
  • 50 gr. crystal sugar
  • 1 tsp. vanilla extract
  • 200 gr. Greek yogurt
  • Juice from ½ lemon

FOR THE SERVING

  • 80 gr. walnuts
  • Spearmint leaves

METHOD
  1. Put the wrap in a bowl full of water and let it soak for 3-4 minutes.
  2. Put 100 gr. of heavy cream, the sugar and the vanilla extract in a small pot and put it on low heat for 2-3 minutes, until the sugar melts.
  3. Put the rest 200 gr. of the heavy cream and the yogurt in a bowl and mix it using a hand whisk until the ingredients become homogeneous.
  4. Take the pot off the fire and put the wrap, after having it squished with your hands. Mix with the whisk until it melts.
  5. Put the mixture into the bowl with the yogurt; add the lemon juice and mix.
  6. Put the mixture in four ramekins, put them in the fridge and let them freeze and get stabilized for 3-4 hours.
  7. Serve with honey, walnuts and spearmint leaves.
