Place the rice with the water and the salt in a saucepan and bring to a boil. Lower the heat to medium and cook, stirring frequently, until all the water is evaporated and the rice becomes mushy.
Then, add the almond drink, the sugar, the salt and the vanilla and turn up the heat a little. Once it starts simmering, add the corn flour, which you have dissolved with cold water, and stir until it starts boiling. Lower the heat and let it simmer for 2 minutes.
Divide the mixture in serving utensils, let them cool at room temperature and then place them in the refrigerator.

*You can serve the fasting rice pudding, if you wish, with cinnamon, dried fruit or any fruit you want.
