Stuffed squid with feta cheese and peppers

INGREDIENTS
  • 2 large squids or shortfins
  • 1 green bell pepper
  • 1 Florina pepper
  • 2 sun-dried tomatoes
  • 150 gr. OLYMPOS feta cheese
  • 100 gr. OLYMPOS kasseri cheese
  • 1 tbsp. pine nuts
  • Paprika
  • Pepper for seasoning
  • Oil for baking

METHOD
  1. Wash the squids, thoroughly remove intestines and let dry.
  2. Cut the kasseri and feta cheeses, peppers and sun-dried tomatoes into dices and mix.
  3. Add pepper, paprika, and pine nuts, add a little olive oil to the mixture and whisk until well-incorporated.
  4. Stuff up to ¾ of each squids with the above mixture and use a toothpick to seal the openings, in order to avoid the stuffing oozing out.
  5. Grill the squids on a griddle pan or place them on a greased baking sheet, heat the oven to 180C and cook them for about half an hour
