Traditional Easter Buns

INGREDIENTS
  • 2 gr. of mastiha

  • 180 gr. crystal sugar
  • Zest of 2 oranges
  • 80 gr. honey
  • 1 tsp. vanilla extract
  • 7 gr. of mahleb powder
  • 320 gr. OLYMPOS butter in room temperature
  • 700 gr. wheat flour
  • 3 medium-sized eggs
  • 60 gr. OLYMPOS milk
  • 30 gr. cognac
  • 1 tsp. baking powder
  • 1 yolk diluted in 1 tbsp

METHOD
  1. Preheat the oven at 180oC on fan mode.
  2. Put the mastiha and 10g of sugar in a mortar and ground until the gum turns into powder.
  3. Put the mixture in the mixer and add the orange zest, 170g sugar, the honey, the vanilla extract, the mahleb, the OLYMPOS butter and mix with the whisk for 7-8 minutes until the mixture gets fluffy.
  4. Add 1 tbsp to the mixer and the eggs one by one. Wait until the egg gets incorporated to the mixture and then add the next one.
  5. Add the OLYMPOS milk and the cognac and mix hard until it gets absorbed.
  6. Mix the flour and the baking powder in a bowl with a spoon and put them in the mixer. Mix for a few seconds until it is congealed.
  7. Remove the bowl from the mixer and keep mixing with your hands until the dough is congealed.
  8. Use 30-35 gr. of dough to shape the buns. The buns must be of the same size, in order to get baked at the same time.
  9. Put the buns on a baking pan covered with a baking sheet and spread them with the diluted yolk. Bake them for 20 minutes.
  10. Take them out, let them cool out and serve them.
