Traditional (Politika) Sweet breads- Tsourekia

2 sweet breads
INGREDIENTS
  • for 2 sweet breads:
  • 150 gr. Cow butter, melted
  • 300 gr. sugar
  • 3 eggs, medium
  • 240 gr. Zois milk full fat
  • 100 gr. Orange juice
  • 1 kl. of flour for sweet bread-tsoureki
  • 5 gr. mahlab
  • 3-4 granules of Chios mastic
  • Zest of 1 orange
  • 1 vanillin
  • 27 gr. instant yeast

METHOD

 

  1. In a mixer’s bowl, put the flour, sugar, instant yeast, mahlab, vanillin, mastic (beaten with a mortar and pestle, until finely grounded) and stir with the hook attachment for 1’.
  2. Add Zois milk full fat and whisk at medium to high speed for approximately 10’, until we get an elastic dough 
  3. Put the dough in a large greased bowl, cover it with a wrap and leave it in a warm place, until it doubles in size.
  4. Once the dough is ready, cut it in 6 equal-sized pieces and shape in 6 strings. 
  5. Make 2 sweet breads with 3 braids each. 
  6. Put the sweet breads in a parchment paper separately and place them in a large baking pan. 
  7. Cover them with a towel and allow them to rest in a warm place, until they double in size (approximately 45’).
  8. In a small bowl, crack the egg, add 1 tablespoon of OLYMPOS Zois milk full fat and start beating with a fork.
  9. Brush over the sweet breads, sprinkle with almond slivers and bake in a pre-heat, fan-assisted oven, at 160ο for approximately 25’-30’ minutes.
