Greek Vasilopita (New Year’s cake) prepared without a mixer

INGREDIENTS
360 gr. sugar
380 gr. all-purpose flour
25 gr. baking powder
6 medium eggs
150 gr. sunflower oil
Zois milk full fat
2 vanillin vials

Icing sugar
Roasted almonds, finely chopped

METHOD
Mix the sugar, flour, baking powder and vanillins in a bowl.
Break the eggs in another bowl, and afterwards add the sunflower oil and OLYMPOS
Milk of Life 3.7%
, and whisk.
Pour the liquid mix into the dry mix and whisk until well combined.
Add the melted OLYMPOS
butter
and continue whisking.
Empty the mix in a 26-28cm baking tray lined with baking paper and insert the lucky New Year’s coin.
Preheat the oven to 170
o
C and bake in the hot air for approximately 35-40 minutes.
Let cool off completely and sprinkle with icing sugar and finely chopped roasted almonds.
